Our sake is crafted on the nano-scale, or maybe pico? … Believe me, it’s a small brewery… Each batch is a unique experiment with the ingredients and brewing method (always with my pocket protector securely in place). Couldn’t be more excited to be Vermont’s first sake brewery!

OUR SAKE
#7 Junmai
Pure rice (Junmai) brewed with 100% Titan rice grown by the Isbell family in Arkansas. Fermented with the understated #7 sake yeast. Delicate with subtle notes of banana, spice and happiness, this premiere brew is perfect for any occasion.
#9 Junmai
Pure rice (Junmai) brewed with Yamada Nishiki & Titan rice (both skillfully grown by the Isbell family in Arkansas). Fermented with #9 sake yeast for more exciting fruity aromas. Crisp and bright, with notes of honey dew and whimsical joy.
#9 Junmai: Nama chozo
A variant of the 1st #9 batch (see the lovely description above). This sake was allowed to develop unpasteurized before bottling (and finally pasteurized to lock in the awesome changes!). More lively and bright than it’s counterpart, we noticed beautiful apricot in the finish.
#7 Junmai: “Batch 3”
Pure rice (Junmai) brewed with Yamada Nishiki & Titan rice. Also fermented with the #7 sake yeast. A sweeter brew with what can only be described as baked agave. Fun!
